Can I change the cabview of my exported train and place it at the back of the train as opposed to the front?

The cab view (in MSTS) will go wherever you define it in the loco's .eng file

CabView ( dhrb1.cvf )
HeadOut ( 1.35 2.47 -3.35)
In this case the cab is set 3.35m back from the centre of the engine.

Your view from a cabview is determined in your .cvf file. Open it with a Unicode editor and look for the views - they're three number groups with the middle one being the y axis. Change those to a number 180 deg. from where they are and you should have it.
