If you read the posts in the RW3 threads, you'll find that the in-cab view position is one of the post-upgrade bugs. You'll just have to wait until a patch is released.

You can adjust this view but not that easily.
I hope to post a tutorial soon as I also struggled with this concept
In principle how I do it (there may be better ways) is as follows (I have used the basic class 37 in this reply)
1-find your loco in the assets and contents folders in railworks (program files/steam/steam apps/common/railworks/assets/kuju/railsimulator/railvehicles/diesel/class37
2- in the case of the class 37 choose either BR Blue or BR Green folders (Sometimes there is a default folder. If you loco has a default try this first)Look for folder cabview and open it
3- find37 cab cam bin file. This is the internal cab camera. Open it with serz program which can be found in the root folder for railworks. this will create an xml file with the same name. Open this xml file with wordpad. in this file you will see amongst all the data some lines beginning d:alt with X,Y and Z cordinates - the first set are the drivers view the second set are the other side view. Ignore the second and fourth group
4 - X is the left right, Y is for vertical, Z is front to back and probably the one you need. Alter these in small amounts keeping a note of where you started
5- save the file in wordpad. Then open it with serz - you should see a quick flash screen while serz works and creates the new bin file
6 - open railwoks find your scenario and see how the view looks - keep trying til you get what you like
MAKE A BACKUP BEFORE YOU START
MAKE A BACKUP AFTER COMPLETION SO ITS NOT OVERWRITTEN
Sounds complicated but easy enough if you are used to working with files
as I say there may be a better way
