Waterfalls
I have placed two different waterfalls on my NZ Route.
One utilises the mountain stream textures as mentioned by saddletank the other is made from the OE Transtex SS texture.
These are both actually used as transfers and give two different effects.
You need to experiment quite a bit to get them right but they can give a realistic waterfall when viewed from a distance.
Cheers

MSTS' terrain mesh won't allow the creation of vertical cliffs. As each poly is 8m across you will always get a minimum of 8m Y distance across any slope you create(*). The only way to get truely vertical cliffs is to build them as models and place them on the sloping terrain, but then you could specify a middle section of the vertical face as the water and animate that, which could work really well.
Or you could create a very nearly vertical face by pulling an individual terrain node or two deep deep down underground forming a huge stretched 'spike' or pit into the surface, then hide the resulting pothole with water or a false floor.
(*)This is using a terrain detail bias of 0 in that subtile which I don't recommend as it hits frame rate hard. The default terrain polygon mesh is 16m - even worse.
