If I downloaded either of these, would it be possible to change existing routes so that they are used (i.e. Settle & Carlisle) instead of the MSTS track?

Or is it only possible to build new routes with them?

There is no automated way to replace default track in existing routes with UKFS. You could rip up all of the existing default track in a route, together with the track interactives like station markers, signals etc, and relay using UKFS.

The problem is that the geometry is totally different in both systems, so it might not be as easy as it sounds. Also the spacing between running rails in UKFS is much narrower as per the prototype, so in stations you would end up with massive gaps between the track and the platforms, so you would end up redoing all the stations.
