What are the best methods to reduce, or remove, terracing in cuttings and embankments etc?

I assume you mean vertical terracing (ie jagged edges).
Setting terrain bias at 0 and embankment/cutting width to 8m - the maximum terrain resolution - will get you the best results attainable within RE. Beyond that you can use embankment or cutting shapes (eg see those I've uploaded for ukfinescale) or hide the jags with trees.

In F9 mode, draw a rectangular box over the selected area, press 'F' and Hey Presto! all ragged edges are smoothed out.

Normally Error Level 0 round the track, F once only to smooth as Terry suggests then you may have to hit the Y key again in case the process caused the terrain to fall away under or over the track slightly. Remember on steep gradients to work downhill to avoid the terrain adjustment on one section overlapping the adjacent piece.
Erro level 0 also recommended with any tiles that are displaying water, otherwise the terrain polygons have a habit of closing back over it either in the RE or the sim.
