East Coast Express, by Europeanbahn (King's Cross - York)
ProTrain Frankfurt - Nürnberg
ProTrain Ostalgie 2 (Berlin - Rostock)
vCTRL, by Europeanbahn (St. Pancras - Lille-Europe)
Anglia, by Making Tracks (London - Norwich and more)
Enterprise Express, by Making Tracks (Belfast - Dublin)
Cambrian Stage 2

There will no doubt be more announced as time goes on, as well as some I've forgotten. Also not all those addons are guaranteed to be out in 2005.
