In RWTools, try Options Menu -> make all RW files Read/Write then try editing your scenario again.

Make sure the kuju assets are ticked/enabled in the scenario editor then re-save your scenario. Many models use the default couplers in the kuju asset folder and if you do not have the kuju assets enabled for the scenario then I am pretty sure you get the derailments when you try to couple. I dont work for Dovetail but worked in the software development industry for a long time and I cant think of a better reason why so many models and routes are released in the state they are . . .

Remember as well you get the bundle packs on steam too and these offer good value for money. They are also usually in the sales too and offer even better value.
